Simply because of the mechanism in which it works. This all happens slowly, and has the effect of preserving valuable nutrients. Centrifugal juicers are known to cause oxidation due to the aeration that is caused by the high speed cutting motion. This is evident if you are ever looked at a cup of juicer and seen a big layer of foam. This foam is the air that is introduced into the juice while it is spinning at 5000+ RPM. A Masticating juicer will also have the advantage of operating at a lower speed, and besides preserving nutrients, it is also quieter and less intimidating to use.
